So far that has been good ...Yes I've frozen it. So far that has been good up to 3 months. By far my favorit is to air dry some of the dough and break it up in chunks. Kept dry it can be re-hydrated and used as a starter. It takes about 24 hours for the first raise but then it is bold and beautiful pretty quickly for daily use again. I will experiment with it and this method for the yeast.
