Today's Fox 10 Segment: Christmas and Holiday Neighbor Gift Ideas

Gifts are an expression of the heart. They show your love. They show your caring. During some tight years, neighbor gifts that I made at home were the only thing that really saved our family Christmas budget. Every penny counts for a lot of folks this time of year! So...  

That is why I am excited to share this Segment on Fox 10 this morning at 9:45 AM!

My Homemade Salad Dressing Segment from Fox 10

Today's Fox 10 Segment: Herb and Spice Alchemy 101



Did you join me today on Fox 10 AZAM  for some amazing information on homemade vinaigrette and how you can use the herbs and spices already in your kitchen for home remedies? It was awesome!  This segment started when I taught a class at Andrea's home for her closest friends.

 Andrea Robinson is one of the morning anchors on Fox 10...and may I just say, having known her for almost 3 years...that she is every bit as real and sweet in person as she is on TVAlexis Vance was also there...another kindred spirit and dear friend who happens to be on Fox 10. She's a doll! Love you Alexis!

Fox 10 Phoenix Morning Segment Today



I just wanted to share the latest segment from this morning on Fox 10 in Phoenix. The morning anchor Andrea is expecting her first baby, AKA Carter. He will be here in less than eight weeks so everyone is getting so giddy excited. It has been my pleasure to work with the Fox family for quite some time...almost a year in fact, and I have loved every visit to the studio. They really are so genuine and I feel a real sense of comradely when I'm there. At any rate, I hope you enjoy this piece as much as I did. 4 Basic Pasta Salads and One dressing

Did you catch this morning's segment on Fox 10 Phoenix Arizona Morning? This represents my typical $15 trip to the veggie market.

If I didn't live in a condo, I'd grow more. Off that veggie trip, we make a lot of salad.
"salad dressing" covers it all under "headings".

I face a dilemma. I want to teach gourmet...but I also feel an extreme need to get back to basics. I've had a lot of comments requesting more down to earth family friendly yet budget friendly recipes. People losing their homes who can't make ends meet. Hard working people, who just don't have work. They just want their kids to have shoes. Real people with real problems. So here I am. I won't be doing a lot of the fancy stuff today. Just some great ideas for that lunch box or dinner that will help in a real way. I want to help you listen to the culinary artist in yourself as well. That means, I will give a basic recipe and then some wonderful ideas of flavors that would go with it. The flavors my friends, will be for you to play with. Meaning? You will get to try to play with herbs and create in a new way. In life and love...this is how the most magic starts. Listen to your heart. I will be listing some basic spices and herbs that work together. The lists are not complete (as this would take pages and pages...remember that this is the beginning...basics).

This is a recipe I have used in cooking classes for several years. It works. I use it all the time in my home as well. It's vastly inexpensive and will save you real money.

Basic Pasta Salad
1 lb pasta of your choice, cooked al dente and seasoned well with salt and pepper. (Lower carb? use of thin sliced cabbage will really improve that carb count.)
1 cup chopped bell pepper
1 cup carrots, shredded or chopped
1 stalk celery, sliced thin
1/2 medium red onion, sliced thin or chopped fine

Basic Vinaigrette (for pennies a jar...) (FAT free coming up in a few lines)
3/4 cup olive or vegetable oil (flavored oils are great)
1/4 cup red wine vinegar or cider vinegar
1 tsp fresh pressed garlic
Herbs and spices
salt
pepper

Herbs are the aromatic leaves, flowers and stems of plants. Fresh or dry work. Make sure you smell the jar. If it smells like the spice or herb then the stuff inside is still full of flavor. Spices are seeds and bark. They will need to be ground or grated. If you don't have a spice mill (not many do...then just buy the pre-ground and be sure it's fresh).

How many just read "herb and spices" and panic hit? I hear you saying, "I don't cook like that"...I need a recipe. Am I right? This is where I want you to try to let go of your cooking inhibitions and try to think with your heart. My 10 year old does it. You most definitely can do it! I believe in you.


For one batch of salad, you will need one batch of salad dressing.
Want fat free salad dressing? Did you know it's almost free to make if you have cornstarch and juice already in your cupboard? Use 3/4 cup vegetable broth or juice and 1/4 cup vinegar. In a cold sauce pan combine the vegetable broth with 1 T cornstarch. Add the liquid slowly and then when combined, cook on medium heat, boiling until thick, about 5-7 minutes. Allow to cool slightly and then add the vinegar and remaining herbs and spices. Use immediately. Keep refrigerated. If dressing gets thick simply add a little more vegetable broth to thin.
Dressing Variations (flavors that work together...again, not a complete list!):

Italian:
Herbs: Basil, Rosemary, Thyme, flat leaf parsley, marjoram,
Spices: Fennel, caraway, crushed red pepper, celery seed.
Flavor Agents: hard cheeses like Parmesan, asiago. Olives, roasted peppers, citrus zest, capers.

Greek:
Herbs: Dill, Oregano, Rosemary, Mint, parsley,
Spices: Fennel, anise, black pepper, dill seed
Flavor agents: Feta cheese, olives, pickled peppers.

Asian:
Herbs: cilantro, mint, lemon grass, sesame oil (use 2 tsp in place of some of the oil)
Spices: Cumin, Chile paste, curry paste, fennel, ginger,
Flavor agents: lime zest, soy sauce, hoisin sauce, citrus zest, peanuts or cashews
Mexican:
Herbs: Cilantro, Oregano, thyme
spice: Cumin, coriander, Chile pods, black pepper, allspice
Flavor agents: lime zest, Roasted corn, green onions, radish, black olives.

Toss the herbs and spices in the dressing. The flavor agents can be added directly to the basic pasta salad recipe. Mix and match fresh veggies as they are in season. Add fruit if you like. For hearty dinners, add some roasted chicken or beef. Marinate meat in the vinaigrette and save a lot of money on those fancy bottles of pre-made stuff. You can do it. Start to feel yourself free up in the kitchen. It is very liberating. Enjoy.

Now for you folks who just want a grab and go dressing fix, you can just use the pre-made spice blends. You know...fajita seasoning, Italian seasoning, Greek Seasoning... Don't hurt yourself if you don't feel able to do the artsy stuff yet. I'm patient... and it's a process. Feel the Love babe.

Good Morning!


Brace yourselves people. I am taking my kiddos and going into the Fox 10 Phoenix studio for another cooking segment. Bright and early in the morning, 8:45 AM, the boys will be helping to roll and mix graham crackers and then make a Chocolate Chip Cheeseball to share with the everyone. If I can actually get the boys to sleep tonight (which is like getting them to sleep Christmas Eve) then tomorrow will be perfect. Mind you, I'm just as giddy as they are to be on TV again. Homemade Play Dough

They are so wonderful down there at the studio! I can't even tell you how important they made my little ones feel. It was like being part of the family! So, if you are joining me from Fox 10, here are the recipes from the segment. We made play dough. Treasure Rocks and Homemade bubbles.

Soft Play Dough3 cups four
1/2 cup salt
2 packages of Kool-aid or flavor aid
2 cups boiling water (that is important... it has to be boiling!!!)
3 T oil.

Combine flour, salt and kool-aid in a large bowl. I use kool aid so my hands don't smell like commercially made play dough. As much fun as it is to play with, I'm not a huge fan of the smell. Though I am told that when they had the 50 yr anniversary of play-doh, a perfume company actually came out with cologne that was the smell of play dough. Whimsical reminder of childhood scents...or just weird. I'm not sure. I don't want to smell like Gumby.

In a microwave safe container, combine oil and water. Bring to a boil, about 2 minutes.

Pour into the dry ingredients.


Mix until combined. Allow to cool. Oh that is so important. No burning little fingers. I don't want any law suits. Geeesh! When cool, knead for 3-4 minutes until totally smooth.

I love using different flavors of kool aid and then mixing them with different flavor extracts for freaky awesome smelling lumps of love dough. For example, here we have cherry-almond, blue raspberry-coconut, and minted-lemonade. Who else makes gourmet play dough? I'm telling you that you will the be coolest dough personage ever. You'll smell like a Smurf-berry too. Just a reminder, this dough doesn't contain preservatives, so please refrigerate. I keep it in used Crystal Light containers. Yes, just another way to reduce, reuse and recycle.

Do you have a child with gluten allergies who can't have wheat flour? Here is the recipe for cornstarch play dough:

Gluten free play dough1 cup cornstarch
1/2 cup salt
1 cup cool water
1 kool aid packet
2T oil
combine ingredients in a microwave safe dish. On high microwave 1 minute. Stir well. Microwave again 1 minute, dough will start to get lumpy. Mix well. Microwave one more minute. Mix well and allow to cool. When cool enough to touch, knead 3-5 minutes until smooth.

This one is edible and just as fun as play dough but without the salty effect. Kids love it!

Candy Dough2 1/2 cups flour
2 cups sugar
2 cups boiling water
2 kool-aid packets.
3 T oil

Follow the same directions for the soft play dough, but use the candy dough ingredients.

Oh That Was Fun!

I had some serious fun this morning with the crew down at our Fox 10 in Phoenix! I won't even tell you how early I left my house to get there...or how insanely early I showed up at the studio. I will however tell you that everyone was so nice to little ol' me! Julie at the gate who helped me know where to park (one of my major anxieties of downtown is parking....Yikes!) Mark the cool security guy who loaded all my stuff out of the car--seriously might have saved my life! I was sure I'd have to lug all that stuff myself. Which would have been fine, but always nice to experience that extra service! When I met Tiffany the assistant producer who found me I just wanted to hug her! She was so sweet and cute! Rick D'Amico still makes me laugh in person. I've seen him on TV for years so it was exciting to be in the same studio with him! Then there is Andrea Robinson...who promised to get me her grandmother's recipe for Texas Sheet Cake! Bring it on honey! I would love to blog it! I also got to meet Alexis and though we didn't do any shooting together, I loved her!

We didn't really get into the Solar Oven, but if you saw it there on the counter, it is a great way to get the kids outside and using the power of the sun to cook food.
