A New Chef Tess Business and 2 NEW Chef Tess Meals in a Jar: Instant Chicken Stuffers and Toppers


Almost 10 years ago, I started sharing my recipes for meals in a jar using freeze-dried and dehydrated items that were "just add water" and super simple...  I started sharing the 52 method.  The method of basing long-term food storage on a 7 day menu and getting 52 of each jar.  It took off like crazy!  It was long before anyone else had even put the concept together.  Several years into it, I wrote The Gourmet Food Storage Handbook, and then a year after that The Meal in a Jar Handbook. 




At the time I pioneered this concept, I had no idea how popular it would become, or how many people would be blessed by the simplicity of the concept. I worked diligently to promote the idea on TV, Radio and at endless preparedness trade shows. I spoke with literally thousands of people about it. Thousands.  

 I didn't make much money for sharing my recipes and wisdom. It wasn't about the money for me. It felt more like a calling than a job and I was (and am) super passionate about helping people...

However, I did see the company that I worked for at the time making thousands of dollars from how my concept could make food storage so customizable and so simply accessible for daily use. I was on salary, and as the sole breadwinner for my family didn't complain about them making money. I considered it part of my job.


Fast forward now to 2017. I haven't worked for my previous employer for almost 4 years. They continue to make money from links off my website here based on direct referrals. It doesn't seem fair to my family. At. All. Now they no longer sell my books or spices on their website. They've moved away from me, it's fair to say that I'm no longer part of their family. So...I'm moving on. I still love them and am forever grateful for the opportunity that they gave me. Period. 

Just to clarify, I have a current employer that treats me like gold. Serious gold. They have built my confidence and lifted my spirits.   It's still salary and I am still the sole breadwinner for my family. Things are better, but it's still a pretty serious job. I'm still recovering from four years of less than ideal finances.  I thank God for my job now every single day. It is a huge blessing!  My current employer doesn't sell freeze-dried foods. This side venture will not be considered a conflict of interest. I'll only be mentioning those new freeze-dried products here every now and then as an effort to bless my family and hopefully your family. So that's what we're doing.  

I've become an independent sales consultant for a company in Utah called Thrive Life. That happened...yesterday. Literally. Mainly because my family does and did rely on the royalty money we did receive from said previous employer to pay some of the family expenses. That loss has been sorely felt.  The other reason, however, is that I've secretly been purchasing Thrive products for the last several years and have actually found their quality to be incredible. Their meat cans are always full. Their textures are perfect. They have more variety. They cater to more of the family's needs and a busy lifestyle than any other freeze-dried company out there, including meal kits similar to the famous "Blue Apron" meals. The simple plates, however, are totally shelf-stable! 











As for this new venture...Anyone is welcome to join my team and get the benefit of having me as your food storage mentor on this journey. I'm excited about that. Mostly, I'm excited to share some outstanding tips and ideas for shelf-stable food.  It also goes without saying, that I will still only suggest foods that I think have the highest possible quality. 

So...Now for today's Recipe Post.


Instant Chicken Salad was such a popular post for fast and easy sandwich filling that I thought I would take it a step further and introduce all of you to this great way to make instant BBQ chicken bun stuffer and instant oriental chicken wrap or salad greens topper. These are great convenience meals for family picnics, camping trips, travel and whenever you're on the go. They are perfect for scout camp and are really delicious.  


 If you are new to this 52-method Meals in a Jar  you'll probably need to read the posts on how to pack the jars with a food saver (if you don't want to use an oxygen absorber) as well as how to make the meals in mylar bags if you decide not to make them in the jars.  Those posts are here: 
For camping and backpacking, I generally will use the method of packing in the mylar bags. Keep in mind that mylar is shelf-stable for a very long time but is not rodent-proof and can puncture, so take precautions when packing them in your bags. This is one I packed for my son for scout camp. {Best. Bartering meal. Ever. }







Now. On to the recipes! 

This isn't just BBQ chicken. It is Kansas City BBQ Chicken. If you know anything about BBQ then you know that the Kansas City version of BBQ is usually tomato based on the addition of molasses or brown sugar. Using tomato powder give you the ability to control the thickness of the sauce without having to simmer it for hours.  If you like your bbq chicken saucy, then this recipe is for you! 


 I used just a few simple ingredients for this stuffer. Once you've used freeze-dried chicken, you'll wonder why you have waited so long to try it! I have been so impressed with the lean, clean, awesomeness of this stuff for a long time. Mainly because it doesn't have any added junk to it. No soy, or msg or extra flavor. It is just chicken. Ahhh. It is a great way to make a shelf-stable meal without added chemicals. 



One thing I am pretty particular about is the seasoning. If you haven't tried my Chef Tess Spices Chef Tess All purpose seasoning,  is one that I developed as a chef for restaurant and banquet use. It goes with everything and hands-down is one of the best seasoning blends on the planet. You won't be disappointed.  I say that and I realize that it is no longer available online, but that will change in the near future! I promise!  

Kansas City  BBQ  Chicken Stuffer 
1/2 cup Tomato Powder
1/2 cup Brown Sugar
2T Freeze Dried Onion
2 tsp Chef Tess All Purpose Seasoning 

1/2 tsp hickory smoke flavor powder or 2tsp smoked paprika
2 cups Freeze Dried White Chicken chunks

Directions: Combine all ingredients in pint-sized jar and top with an oxygen absorber. You may also use a mylar bag instead of the jar.  You can cut the recipe in half for smaller portions or double for larger families. Simple stuff. 


Safety Note: For the love of Pete, please use an oxygen absorber. They are the magic ingredient that makes these meals safe for long-term storage. Bacteria and junk can't grow without oxygen and moisture so this is a biggie! By the way, oxygen absorbers are a one time use. They are a must! After you have filled all your jars or mylar bags with the recipe ingredients, place a 300cc oxygen absorber in each jar (or bag). Seal within 20-60 minutes for the oxygen absorber to be viable. 


To prepare: Combine chicken stuffer mix with 2 cups boiling water.  Allow hydrate, about 10 minutes. Add more water to-taste of sauce thickness.






Fill your favorite buns with the mixture.I make hamburger buns using the No Knead 4 Ingredient Overnight Bread Anyone Can Make and they're  ready to go for a low-cost meal!

Lettuce wrap filling  or salad green topper:




This recipe is versatile for either a salad wrap, topper or even a tortilla wrap. You'll love the heat! If of course, you're not a spicy person, you can omit the pepper flakes all together. I serve my salad with a squeeze of hot chile sauce and some fresh shredded carrots on salad greens. It is a simple grab when I'm traveling or just want a light lunch. 


Oriental Spicy Chicken Salad 

2 cup  Freeze Dried Chicken chunks (3 oz) 
1/3 cup Soy Sauce Powder (1.5 oz)
2T  Lemonade Powder
1T dehydrated garlic slices (store purchased or make your own)
2 tsp red pepper flakes (more or less depending on how hot you like your meals)
1/3 cup Dehydrated Onion
1 tsp Chinese 5 spice 
1T Ultra Gel 

Directions: Combine all ingredients in pint-sized jar and top with an oxygen absorber. You may also use a mylar bag instead of the jar.  You can cut the recipe in half for smaller portions or double for larger families. 


To prepare: Combine chicken stuffer mix with 2 cups boiling water.  Allow to hydrate, about 10 minutes. Add more water to-taste of sauce thickness. Serve on top of greens. Or wrap in lettuce leaves for salad wraps.

Bacon and Egg Salad of Glory!




Simple egg salad is something everyone should know how to make, but a killer egg salad is one that people will talk about, beg to have for dinner, and will be used for years to come at your house.  This is one of those egg salad recipes you cannot live without!  

Here's the simple recipe:

Chef Tess' Bacon and Egg Salad

1/4 lb bacon, chopped
1/2 medium onion, diced
1/4 cup sliced olives
3 Tbsp dill pickle relish
12 boiled eggs, peeled and diced
1/4 tsp garlic pepper
3 Tbsp yellow mustard
1 cup mayonnaise
1/2 tsp salt


Directions: In a large skillet combine the bacon and onion, and cook until bacon is crisp and the onion is caramelized. Remove from  the heat and allow to cool. Place all remaining ingredients in a bowl and add the bacon mixture. 




Chill. Serve as sandwich filling or stuffed in tomatoes.  We love it with a drizzle of hot sauce and some extra blue cheese crumbles. Your family will love this!

Pistachio Mozzarella Salad and the Health Benefits of Pistachios




Pistachios have long been one of my very favorite nuts. Ever. In the history of ever. So, when some friends of mine at Gourmet Nuts and Dried Fruit sent me this huge box of my favorite little nuggets of love and asked me to try them out, what was I to do? 




Seriously. Check them out. They showed up really fast and the quality is amazing!

I am not a fan of leaving my house in the summer to go shopping, so anytime I can order something this awesome online, I'm game. Plus, at the bakery, who has time to stop and shop? I can barely stand up after a long day of restaurant business and catering orders. 
So, I'm going to be baking with them a lot in the next few weeks, but I had to share some of the benefits of pistachios along with this incredibly easy recipe. 



Some of the health facts of pistachio:

·   1. According to Thomas and Gebhardt (2006), pistachios contain a lower calorie content of only 160 per one ounce in comparison to other nuts. 

2. Pistachios contain a higher amount of protein in comparison with other nuts such as almonds, cashews, hazelnuts, macadamias, pecans, and walnuts. The amount of protein found is 6 g per 1 ounce, which is the highest in comparison to other nuts.

3. The fat content in pistachios is also the lowest compared to other nuts. Statistics collected by Thomas and Gebhardt (2006) show that the fat content is 13 g per 1 ounce.

4. Pistachios are also a very good source for mono-unsaturated fatty acids such as oleic acid and antioxidants. Taking them on a regular basis is known to be effective in decreasing low-density lipoprotein (LDL), which is known as “bad” cholesterol and helps to increase the amount of high-density lipoprotein (HDL), commonly known as “good” cholesterol.

5. Trace elements or minerals found in pistachios include calcium, iron, magnesium, phosphorous, potassium, zinc, copper, manganese, and selenium. It is important to note that they contain the highest amount of phosphorus, along with almonds and cashews. Furthermore, they also contain the highest amount of potassium with respect to all other nuts.

6. The amount of sodium found in pistachios is zero, which is different from other nuts like hazelnuts and pecans. This is good news for people suffering from hypertension because they constantly have to curb the intake of sodium in their diet.

The above nutritional details show that they are not just another nut, but actually a very good food to be consumed at any point throughout the day. In fact, it is a wholesome food all by itself.  (source here)

So, here's my recipe for a pistachio mozzarella salad for the summer that will blow your ever-lovin-mind when it comes to healthy and fast! It's light. The whole recipe is less than 300 calories and 12 net carbs and it gives you 25% of your protein for the day. Win!


Pistachio Mozzarella 
on Beefsteak Tomatoes Salad
1 serving

1 Very Ripe Beefsteak Tomato
1 oz. Fresh Mozzarella, sliced
1 Tbsp fresh Chopped Basil
1 tsp. Chef Tess Romantic Italian Seasoning 
1 Tbsp Fresh chopped purple cabbage (for color, optional)
1/4 cup raw pistachios here
Salt and pepper to Taste
Balsamic Glaze or balsamic vinegar

Directions: Slice the tomato into 4 wedges. Slice the fresh mozzarella in 4 wedges. Season the tomatoes with Chef Tess seasoning and top with the mozzarella. Top with fresh chopped basil and one Tablespoon of pistachio per wedge. Season with salt and pepper to taste. Serve chilled.

Summer Apple Beet Salad with Peach Balsamic Dressing

 This week I've had an influx of red and golden beets from local farmer friends of mine Eric and Christina Amadio at Amadio Ranch in Laveen, Arizona. These beauties are flipping perfect, and organically grown. Plus, they come from some good hard-working people that I just love! If you've never tried golden beets, they are a bit milder in flavor than red beets and they are gorgeous! I love them.  

This is a light and refreshing salad that really is brilliant in color and is extremely simple to make. The addition of apples gives the salad a sweet-tart crunch balanced with the peach balsamic dressing. I'm picky. I'm specific about the brand on of balsamic that I use because the flavor is deep and complex with natural sweetness. 


Summer Apple Beet Salad with Peach Balsamic Dressing

Ingredients:
4 large beets, about 1 lb. Peel and dice.  
1 crisp tart Fuji or Pink Lady Apple, diced
1 white sweet onion, sliced thin

Dressing:
1/4 cup agave nectar
1/2 cup high quality Extra Virgin Olive Oil
1 tsp dry dill
salt and pepper to taste

Directions: 
Cook the beets by placing them in a 1 quart pot on the stove. Cover and steam 15-20 minutes over medium heat until tender. Cool.

In a large bowl combine the beets and chopped fresh apple with the dressing ingredients.  The apples won't get brown because they take on the color of the beets. 
I love how colorful it is!

* If you do not have peach infused white balsamic vinegar, you can use 1/4 cup white balsamic+1/4 cup peach puree.

There you go. It's vegan, clean, and divine!
A very simple salad for all the Spring and Summer adventures ahead.

Tess' Top Secret Loaded Potato Salad (Banquet Sized Recipe)



Once upon a time my favorite friend Heather invited me over for a barbecue. She whipped out a giant vat of potato salad that she had made and it blew my freakishly adorable mind-space. Number one, because she made just enough for me, and maybe a tablespoon or two for the rest of the guests. You know, I love good potato salad. I do. Don't judge me. Secretly you do too. I bet I'm not the only one who has it as a midnight snack instead of cheesecake. Well. Maybe only if there isn't cheesecake in the house. Number two,  It was perfect. It had just the right balance of zing and zang. The best part...
It had bacon in it. Yeah. Bacon.  Then she confessed to me her ultimate secret for the best potato salad ever. The secret ingredient she used, besides the bacon fat in the dressing, was also the use of pickle brine in the dressing. That's when things got crazy! I started to squeal gleefully!  I pulled out ceremonial head-garb and started singing...The Heather and Tess Ya-ya Sisterhood dancing ensued as I confessed that I too had been using pickle juice in my potato salad dressing for years! After we removed our ceremonial head-garb and stopped dancing, we continued comparing recipe similarities, and it always came back to the pickle juice being the secret ingredient. Ya know...and the bacon. Confession...I have used pickle brine in my potato salad since I was in my twenties, So, since last week...give or take a few decades. This is just a brilliant use of an otherwise "useless" liquid that generally gets thrown away in the trash anyway! I couldn't wrap my head around the bacon fat for my clients, but for the family barbecue, it was absolutely spot-on!

Several years later as I was developing a potato salad recipe for catering and personal chef events, this loaded potato salad just kept appearing in my universe.  It was a sign.  It needed to be part of what I just served regularly.  It is a potato salad without eggs (though you could add those if you wanted to do so) and it is a potato salad that has to always use dill pickle juice instead of vinegar in the sauce. Don't ask me why...except that the saltiness of the pickle brine with the potatoes give it a punch of flavor! To give balance to the tangy zip of the pickle juice, I use sweet pickle relish as well.  It seems weird, but it works! Yes! This is a banquet size recipe that will make 60 servings. Obviously it can be cut back if you need to do so...but it will ensure that there is something for your guests to eat after you've had your "taste". 


Tess' Loaded Potato Salad

yield 60 ½ cup servings

Ingredients:
5 pounds red potatoes, diced into 1/2 inch cubes, skin on, washed

2 1/2 cups mayonnaise
 ¾ cup dill pickle juice OR white vinegar
1 tsp black pepper, freshly cracked
1 tsp salt
1 tsp thyme, ground
1/2 tsp Cumin, ground
1/2 tsp curry powder
1T  minced garlic
1/4 lb bacon crumbles
1 cup green onions, sliced thin
1 cup diced celery
1/4 cup sweet pickle relish

Procedure:
In a large pot of salted water, add potatoes and cook until just fork tender. Remove from boiling water and cool. Combine remaining ingredients in a large 2 gallon bowl. Mix with potatoes, adjusting seasoning as needed, chill well.



Serve with your favorite stuff...or just eat it at midnight in your jammies and slippers in front of the open fridge door. I'm not going to judge you. Just make sure to wear the ceremonial head-garb. Xoxo!

Good Morning Arizona TV Segment and Recipes!


Tomorrow morning I will be visiting my darlings on Good Morning Arizona with some great side-dish ideas for the upcoming memorial day weekend!  Here are the recipes for all of you to enjoy!
 
Tess' Red White and Blue Caprese Salad
  • 2 pints cherry tomatoes
  • ½ lb fresh mozzarella balls, drained
  • 1 pint blueberries
  • ¼ cup balsamic glaze
  • ¼ cup sun-dried tomato pesto
  • Salt and Pepper to taste
  • chopped basil (optional)
Directions:
  • Smear pesto on the bottom of a large serving platter.
  • Arrange cherry tomatoes, mozzarella, and blueberries in stripes or artistic design over pesto.
  • Drizzle with balsamic glaze and season with salt and pepper. Garnish with chopped basil if desired.




Chef Tess Sweet Corn and Avocado Salsa (Cowboy Caviar)
This recipe uses the bounty of the garden and is great with chips or as a side salad

Yield: 2 to 3 cups
  • 1 ripe avocado, cut into 1/4-inch dice
  • 3 tablespoons fresh lime juice
  • 1 15 oz can diced fire roasted tomato, drained
  • 1 ½ cup fresh corn
  • 1 cup cooked black beans, well drained
  • ¼ cup green onion, chopped
  • 1 jalapeño pepper, seeded and minced (for a hotter salsa, leave the seeds in)
  • 1/4 cup chopped fresh cilantro (2T dehydrated)
  • Coarse salt (kosher or sea) and freshly ground black pepper
  • 1T Chef Tess Fajita Seasoning (optional) OR Taco Seasoning

Directions:

  • Place the avocado in the bottom of a nonreactive mixing bowl and gently toss it with 3 tablespoons of the lime juice. Spoon the tomato on top of the avocado.
  • Add the corn kernels to the mixing bowl. The salsa can be prepared to this stage up to 2 hours ahead. Refrigerate it, covered.
  • Just before serving, add the jalapeño and cilantro to the mixing bowl and gently toss to mix. Taste for seasoning, adding more lime juice as necessary and season with salt and pepper to taste; the salsa should be highly seasoned.
