Good Morning Arizona! 3 Brilliant Ways to Use Thanksgiving Leftovers for Breakfast, Lunch and Dinner

Tomorrow morning I will be on Good Morning Arizona sharing 3 Brilliant ways to use Thanksgiving Leftovers for breakfast, lunch, and dinner! I'll be incorporating a lot of whole grain goodness from Organicgrains.com in this one because I not only have the honor of using their grains often in my baking as part of my regular job but also because I love them!
Breakfast:

Puff Pastry (or Biscuit) Turkey Quiche Cups

1 package froze puff pastry*
8-10 oz cooked turkey, well seasoned
8 slices of bacon, sliced in 3 pieces (total 24 small pieces)
3 eggs, beat well
1/4 bell pepper, chopped fine
12 1 inch squares of Havarti or Swiss Cheese
Pepper to taste

Allow the puff pastry to come to room temperature and cut into 12 squares. Line the bottom of a muffin cup with the pastry up the edges.  Put pieces of bacon and bell pepper in each cup and top with a few chunks of turkey.  Fill cup with 1 Tablespoon scrambled egg. Put a nice little cheese top on the whole deal-eee-oh (no I really don't have a real technical jargon for the muffin thing-a-ma-gig...sorry.) Bake 425 degrees 13-15 minutes. Serve warm. Any leftovers need to go in the fridge.
*Variations:
Low carb: Omit the puff pastry and spray the muffin tins well with a non-stick coating (or line with a cupcake liner).  Proceed with the recipe filling the cups as described.
Biscuit: Use biscuit dough in place of the puff pastry dough.
Flavors: Change the seasoning using your favorite variety of fajita seasoning for a Southwest quiche, French herbs de Provance for a more classic flavor, Spinach to replace the bell pepper if desired. Play with these!

Lunch:

Start with the Sweet Potato Bread...

The Sweet Potato Bread is my original recipe made in full in the Fall Sweet Potato Bread Tutorial with the embellishments and leaves.  Here, I'm just giving you the recipe for the plain loaves.

Chef Tess' Sweet Potato 5 Day Bread Dough
yield: 4 loaves
2T active dry yeast (over 3000 feet use 1 T only)
4 cups milk, cold is best
3/4 cup honey Or Organic Maple SYRUP
1T salt
4 eggs (or 1 cup egg replacement)
3/4 cup oil
1 1/2 cup mashed sweet potatoes. cooled to body temp again. The consistency of thick oatmeal.
1T baking powder

 2T cinnamon,
2tsp ground ginger and
1T vanilla
2 cups Organic Grains Freshly Milled hard white wheat flour
12-14 cups  organic grains bread flour  (I have used fine ground white wheat and been fine doing all whole grain, use only 12-14 cups total if whole wheat is used )

Directions: Dissolve yeast in milk. Stir in honey. Allow yeast to get all foamy and look like it is having a hay day. Add egg, oil, mashed sweet potato, baking powder, 2 cups whole wheat flour, 2 cups all-purpose flour spices, vanilla, and salt, in that order. Do not let yeast come in contact with salt on its own or it will kill the yeast. Beat until smooth. Allow dough to rest 10-15 minutes
Add enough of the flour remaining to make a soft dough that is easy to handle but not dry. Turn dough onto a lightly floured surface and knead 10 full minutes. about 600 turns. Yea. 600 by hand. 5-6 minutes by machine on medium speed. Form into a ball and place in an ungreased 2 gallon bowl, covered tightly. If you don't have a large enough bowl...use two smaller bowls. Or...just half the recipe if you are worried. Put in the fridge. Punch down after 2 hours (this may be faster if you use warm ingredients or flour. If the dough is over 85 degrees when you put it in the fridge, be sure to punch down sooner. Also...if you have kids who open the fridge a lot, be sure to lower the temperature a bit so that your fridge is really as cold as it should be) Form into a ball again. Cover tightly and chill at least 8 hours.
Be sure to punch down daily (this not only expels gas, but also ensures even temperature in the dough). This dough can be made up to 5 days before Thanksgiving! So, it's nice to have around. It's also amazing to make into rolls instead of bread, should you choose to do something else. This makes four loaves. Four. I will only make one here, but you'll get the idea. Take one-quarter of the dough and roll it into a tight ball. I like to expel as much air as possible so it raises rather uniformly. Gather the dough at the bottom and make a tight ball out of the dough.
Place on a parchment lined baking stone or baking sheet, at least 12 inches by 10 inches. Allow to rise until doubled, uncovered, lightly misted with water. When almost raised, turn on the oven to 425 degrees.  Bake 425 degrees 15 minutes and lower the temperature to 350 for the final 15-20 minutes of baking.  Allow cooling. Slice and wrap tightly.

To make into the Turkey Grilled Cheese simply place a slice of the well-seasoned turkey and 2-3 slices of sharp cheddar on a thick slice of the sweet potato bread. Grill on the stove in a medium skillet over medium heat with melted butter until golden and toasted.  Add a Tablespoon or two of cranberry relish and a drizzle of good balsamic. Garnish with minced fresh rosemary if desired.

Dinner:
Marinara Turkey Sliders with Roasted Garlic

Get your rolls.
In this recipe, I used the 4 Ingredient Make-Ahead-Rolls from Organicgrains.com. Or the Make-Ahead No Knead Cracked Wheat Dinner Rolls (pictured below).  If you're still looking for great roll recipes, these will save your brain power.

You will need:
1 dozen baked rolls
1 lb cooked turkey
1 cup roasted garlic
1 1/2 cups marinara sauce
12 slices mozzarella
1/2 cup Garlic infused Ahuacatlan Avocado Oil
1 cup parmesan cheese
Parsley, chopped (for garnish if desired)

Direction:
Cut a 1 1/2 inch circle out of the top crust of each roll and set aside. With each roll, remove a little of the soft interior or push it down with your thumb.

In each roll, add 1 1/2 oz turkey, 2-3 pieces of roasted garlic, 2 Tbsp Marinara, and1 slice of mozzarella. Top with the circle of crust that was removed previously. Brush with garlic infused olive oil and sprinkle with parmesan cheese. Bake at 350° for 15-20 minutes. Serve hot. Garnish with chopped parsley if desired.

There you go! Make some awesome meals with all those Turkey leftovers!

Easy No Baking Necessary Desserts for 4th of July

Good Morning Arizona was sweet enough to have me come down again for stinkin' fun segment! We laughed and played for the 4th of July with some very simple ideas for summer desserts.

We made these awesome dishes.

We grilled my favorite pound cake:

Grilled it 30 seconds or so on a hot grill pan and topped it with fresh fruit, whip cream and some candied pecans.

Next we made the mini fruit pizzas using my all-time favorite, favorite, favorite sugar cookie recipe:

Topped them with a smear of  Chocolate Chip Cheeseball and some fresh fruit...and here it is!

There you go darlings! Happy 4th of July!

Bacon Wrapped Shrimp Lemon and Herb Linguine...7$ Dinner for a family of 5

We're back for another Money Monday! Let's just dive right in to this week's ideas...

Money-saving shopping tips
  • Shop the discount stores like the 99cent Only Store chains for veggies and pasta. They have fresh produce, including a lot of organic choices.
  • Use salad shrimp. It costs a lot less because of the size.
  • The biggest cost on this is the bacon. The pre-cooked bits are going to save you money and fat grams.
Ingredients
  • 1/3-1/2 cup Extra Virgin Olive Oil (lemon infused)
  • 1 small red bell pepper, julienne
  • 2 leeks, trimmed, halved, cut lengthwise, sliced thin, washed, rinsed, dried
  • 2 cloves Garlic, pressed
  • 2 lemons, zested and juiced
  • 1 2.5 oz pre-cooked packaged diced bacon
  • 1/2 lb salad shrimp, frozen
  • 1/2 lb linguine, cooked according to package directions
  • 2 zucchini, sliced thin in ribbons
  • 6 oz  extra large black olives, drained (optional)
  • smoked paprika, salt and pepper to taste
  • Fresh parsley to taste (about 1/4 cup chopped)

Instructions

  • Trim off the dark green parts of the leeks  and use the light green stuff. Chop in half lengthwise and then slice thin.
  • In a large 14 inch skillet, heat the oil. Add the bell pepper, leek, garlic, lemon zest and bacon. Cook until vegetables are just tender.  Push the vegetable to the side of the pan.
  • Add the shrimp and cook until pink, about 3 minutes. Don't overcook the shrimp. I'm a nerd here, but honestly, I'm not a fan of rubber shrimp. If food bounces back when you chew it, you should spit it out. That's just my humble (yet highly accurate) opinion.
  • Add the cooked pasta, and olives and lemon juice. Toss with the vegetables. Season with pepper. Taste. Season as needed.
  • Transfer to a serving platter or bowl. Garnish with chopped parsley and sprinkle with smoked paprika.
  • Serve hot.

There you go darlings!

Cheese and Almond Crusted Tilapia

I shared this recipe on Good Morning Arizona yesterday.

The crust is perfect. The fish is tender. The balance of the lemon and the pepper will make you so happy!

Chef Tess' Cheese and Almond Crusted Tilapia
Ingeredients:
1 eggs
2 tsp lemon zest
1 tsp fresh black pepper
1 tsp minced garlic
½ cup almond flour
½ cup freshly grated Parmesan cheese
4 (6 ounce) tilapia fillets
2T cup all-purpose flour (or Gluten-free alternative) for dusting
6 tablespoons butter
½ cup freshly grated Asiago cheese
¼ cup choped fresh parsley
lemon wedges
Directions:
  • Beat the eggs with the lemon zest, pepper, and garlic and garlic until blended; set aside.
  •  Stir together ground almonds with ½ cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
  • Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the Asiago cheese, cover, and continue cooking until the cheese has melted, about 5 minutes.
  • Transfer the tilapia to a serving dish, and garnish with parsley and lemon wedges to serve.
There you go. Awesome Tilapia!

Salmon Wellington and Good Morning Arizona Fish Recipes

Lent is here. We don't eat fish often at my house. Ace just can't stand the smell of fish (or the taste) and I just can't stand the look on his face when the house is stinky. Without fail, whenever we go somewhere with salmon on the menu, I order it. I love it. When I go to Utah, I go fishing.  Ace would rather die than go fishing. How can we be so opposite and be so perfect for each other? I don't know.  The picky eaters in my house are not my kids. Ironic.

When the producer at 3TV asked me to do a fish segment this week to help folks with fish recipes for Lent, I had to bring in some of my best work.  Mind you, we don't eat a lot of fish. These are fish recipes I used as a chef cooking for other people.  Ace came home from work to a kitchen full of fish. He got a plate. He devoured this stuff...and he said, "I ate fish. I'd eat it like that ever single day!" So...we have a winner! This salmon is topped with a savory Dijon dill sauce, feta, and spinach then wrapped in a flaky layer of puff pastry. It looks amazing and it tastes even better! Yes. I'll be making this again. It is perfect for a fancy dinner or a simple night at home when you want  to make something special for your family.
 Tess' Savory Salmon Wellington
Ingredients:
1 tablespoon kosher salt
1 1/2 pounds salmon fillets
2 tsp dried dill seasoning
1/2 cup Dijon mustard
1 1/2 cups mayonnaise
1 cup crumbled feta cheese (or Goat Cheese)
1 cup frozen chopped spinach, thawed
and drained
1 (17.5 ounce) package frozen puff
pastry, thawed
1 egg white, beaten
Directions:
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Sprinkle salt on both sides of the salmon. Mix dill, mustard, and mayonnaise in a small bowl and spread over the salmon, then sprinkle the feta cheese on top. Layer the spinach over the feta cheese.
  • Roll the pastry out wide enough and long enough to wrap around the salmon, about 1/4 inch thickness. Place the salmon in the center of the pastry and fold the pastry over the salmon. Place the roll seam-side down on a baking sheet. Cut several small slits in the pastry to allow steam to escape. Brush the egg white onto the pastry.
  • Bake in the preheated oven until the pastry is golden brown and the salmon flakes easily with a fork, about 45 minutes.
There you go! Enjoy!

The Skinny on Brownies! Today's Valentine's Brownie Segment

Okay, are you looking for a great Valentine's brownie recipe? This is my Chef Tess Gourmet Brownie Recipe! It is by and far my favorite! Oh...and we shared it on 3TV this morning!

Ingredients
1 1/4 cup butter
4 cups sugar
1 T vanilla,
2 tsp rum or amaretto extract
1 T cinnamon
1 T orange zest
1/2 tsp ground Cayenne pepper
8 eggs
2 cups flour
1 1/2 cup dark cocoa powder
1 T salt
Instructions
Preheat oven to 325 degrees. Cream the butter, sugar, eggs, vanilla, and spice until light. (Everything should be at room temperature for best mixing.) Add the flour, cocoa, and salt, mixing 2 minutes.
Pour int a lightly greased bar pan, at least 9-x13. Bake 40-45 minutes -- slightly undercooked is better than overdone and dry.
Cover with ganache and toasted almonds.

Ganache

Ingredients
16 oz. high quality chocolate chips
1 cup heavy cream
2 cups toasted almonds
Instructions
Boil cream.
Place chocolate in a metal bowl and pour hot cream over the chocolate. Stir with a wire whisk until smooth. It doesn't take long.
Pour over brownies when they are cool and cover with toasted almonds.
Allow to cool -- if you can wait that long -- and cut into squares.
