Taco Burgers on Fluffy Cornmeal green chile buns




Taco burgers are something of a treat around here. We don't eat meat often, but even my vegetarian husband Ace downed three of these burgers...with gusto! So I thought they needed to be shared. The bun is so fluffy and flavorful. It's the perfect accompaniment to the spice of the burger and the creamy tomato relish is so simple, yet amazing! We used the last of our garden grown tomatoes...and it was a hit!

Chef Tess' Fluffy Corn Meal Green Chile Buns

3 cups all purpose flour
1 cup cornmeal
1/4 cup sugar or granulated fructose
1T active dry yeast (one packet)
1 tsp salt
1 tsp granulated onion
1/2 tsp garlic powder


1/4 cup oil
4 ounce can diced green chiles
1 1/2 cup water
1/4 cup lukewarm water


In a small bowl combine the yeast and 1/4 cup water with a pinch of sugar. Allow to bubble (about 5 minutes) Combine flour, cornmeal, sugar, salt, onion, garlic. Add the oil, chiles, and water. Knead by hand about 5 minutes until a soft dough is formed. Form into a ball and allow to raise for 1 1/2 hours (in a warm kitchen). After dough raises, divide into eight equal pieces. Form into balls. Lightly oil a baking sheet. Flatten balls slightly until they are 3-4 inches in diameter. Place on baking sheet. Lightly spray with a little oil and cover with plastic wrap. Allow to raise about an hour, until very fluffy. Preheat oven to 400 degrees. Sprinkle tops of rolls with additional cornmeal. Bake 20-25 minutes until golden brown.
My Taco Burgers

1 lb lean ground turkey or beef
1 package taco seasoning ( I use my homemade taco seasoning)
1/2 cup minced onion
1 clove pressed garlic

Combine meat with seasoning and cook on a hot griddle until well done.


Creamy Tomato Relish

2 cups chopped fresh tomato
1/4 cup light sour cream
2T chopped fresh cilantro

We piled the relish on the burgers and added a good wad of home grown alfalfa sprouts (How to Home Grow Alfalfa Sprouts (Tutorial Tuesday...)


There you go. Make some taco burgers!
