Chef Tess Bakeresse Freeze Jam
No Cooking involved, just a few simple ingredients and you're on your way to fresh and delicious homemade jam!

Basic things to know:
  • Most freezer jam uses a natural product called Freezer Jam Pectin.
  • All freezer jam can also be made for fridge use, as long as it is used up in about 3 weeks.
  • No special canning jars or equipment are needed for freezer jam!
  • You can make it today at a very low cost by using seasonal produce.


ANY fruit into freezer jam basic recipe:
4 cups of crushed fruit
1 ½ cups sugar
1 Pouch of Ball Fruit Jell® freezer jam pectin

In a large glass 2 quart bowl, combine the pectin and sugar. Mix until well combined, about 1 minutes. Add the fruit, mashing well and combine 3 minutes. until well mixed. Add your choice of spices and flavorings. Put into 1 cup containers leaving 1/2 inch head space if you plan on freezing it. This recipe yields 5, 8 oz. freezer jars. Allow to sit at room temperature 30 minutes until jam sets. Freeze up to one year in freezer containers or just put in the fridge and use within 3 weeks.

Chef Tess' Sugar Free Poached Pear and Pineapple Freezer Jam
2 cups cooked (or extremely ripe, fresh) peeled pears
2 cups crushed sugar free pineapple
1 pouch (2 in a package)Ball Fruit Jell Freezer Jam Pectin
1 1/2 cups spoon able xylitol, 24 drops of stevia, or Spenda
1/2 tsp each, LorAnn vanilla bean paste, LorAnn sweet dough emulsion, and Chef Tess Wise Women of the East Spice blend

In a large glass 2 quart bowl, combine the pectin and spoon able xylitol, stevia or Splenda. Mix until well combined, about 1 minutes. Add the fruit, mashing well and combine 3 minutes. until well mixed. Add the spices and flavorings. Put into 1 cup containers leaving 1/2 inch head space if you plan on freezing it. This recipe yields 5, 8 oz. freezer jars. Allow to sit at room temperature 30 minutes until jam sets. Freeze up to one year in freezer containers or just put in the fridge and use within 3 weeks. It's that absolutely easy! Crazy right?!

The Bread Art Book Launch Party! This week!





 I'm sharing a lot of pictures, because I am, for once in my life, without words for how I feel. A lifelong dream is finally coming true and my first bread book was released today!  Preparations are underway for the book launch party on Friday evening and all of  you are most heartily invited to attend.

My New Bread book on Pre-Order! Bread Art: Decorating and Painting Edible Bread for Beginners


 I have dreamed of being a published author for most of my life.  When I started creating Bread Art and edible decorative loaves with instructions so simple that anyone could make them, I had no idea how popular this idea would become. In my new book, there are extensive photo tutorials, easy recipes, and directions for taking any loaf of bread and turning it into a masterpiece! No baking experience required! You'll be shocked and amazed at how easy this craft can be!

That being said, this book is my first cookbook that hasn't been sponsored by a company.  I am completely excited...and nervous. I'm thankful for the faith this publisher has put in me, especially after the many who turned me down. It was a tear-filled day to get that letter of acceptance!

The Meal in a Jar Handbook Update!

If I haven't been posting as much this last week as I normally do, there is a reason.  I've been working non-stop on a really amazing project!!

Yesterday the manuscript for 
 The Meal in a Jar Handbook: Gourmet Food Storage Made Easy 
went to the publisher. It is scheduled to go to print the first part of August and will be released for sale sometime in November.  Needless to say...we've had a lot of this...
And this...



I'll keep you posted on the final release dates and when it will be available. I'm soooo stinkin' excited (and a tiny bit sleepy)!!

Today's Bread-Art Photo Shoot...and a NEW Book!!



Announcing the next Chef Tess Bakeresse cookbook! 
I just signed a book-deal for a Bread Art craft and baking book! That is the next release after the Gourmet Meal in a Jar book that I'm also working on currently!

 The bread book is due to be released January of 2014!! We're super excited around here and today we had my friend  , the  photographer, at my home taking pictures for 4 hours! I took these photos I'm sharing here. Hers were just amazing! I won't even tell you how many hours I baked and prepped for this first shoot. Yes, I never sleep. It's sick how hard I work, but then again, that's part of life isn't it? I love what I do. I wouldn't change a thing!   That being said,  I wanted to share some of the beautiful breads! There were many more, but here are some of my favorites... 

Goldfish sweet bread
 Sea-shell sourdough on a bed of French grey sea-salt.
 Light rye and herb star-spangled loaf.
