Good Morning Arizona! 3 Brilliant Ways to Use Thanksgiving Leftovers for Breakfast, Lunch and Dinner


Tomorrow morning I will be on Good Morning Arizona sharing 3 Brilliant ways to use Thanksgiving Leftovers for breakfast, lunch, and dinner! I'll be incorporating a lot of whole grain goodness from Organicgrains.com in this one because I not only have the honor of using their grains often in my baking as part of my regular job but also because I love them!
Breakfast: 

Puff Pastry (or Biscuit) Turkey Quiche Cups

1 package froze puff pastry*
8-10 oz cooked turkey, well seasoned
8 slices of bacon, sliced in 3 pieces (total 24 small pieces)
3 eggs, beat well
1/4 bell pepper, chopped fine
12 1 inch squares of Havarti or Swiss Cheese
Pepper to taste

Allow the puff pastry to come to room temperature and cut into 12 squares. Line the bottom of a muffin cup with the pastry up the edges.  Put pieces of bacon and bell pepper in each cup and top with a few chunks of turkey.  Fill cup with 1 Tablespoon scrambled egg. Put a nice little cheese top on the whole deal-eee-oh (no I really don't have a real technical jargon for the muffin thing-a-ma-gig...sorry.) Bake 425 degrees 13-15 minutes. Serve warm. Any leftovers need to go in the fridge. 
*Variations:
Low carb: Omit the puff pastry and spray the muffin tins well with a non-stick coating (or line with a cupcake liner).  Proceed with the recipe filling the cups as described. 
Biscuit: Use biscuit dough in place of the puff pastry dough.
Flavors: Change the seasoning using your favorite variety of fajita seasoning for a Southwest quiche, French herbs de Provance for a more classic flavor, Spinach to replace the bell pepper if desired. Play with these! 

Lunch:


Start with the Sweet Potato Bread...

The Sweet Potato Bread is my original recipe made in full in the Fall Sweet Potato Bread Tutorial with the embellishments and leaves.  Here, I'm just giving you the recipe for the plain loaves. 

Chef Tess' Sweet Potato 5 Day Bread Dough
yield: 4 loaves 
2T active dry yeast (over 3000 feet use 1 T only)
4 cups milk, cold is best 
3/4 cup honey Or Organic Maple SYRUP
1T salt
4 eggs (or 1 cup egg replacement)
3/4 cup oil
1 1/2 cup mashed sweet potatoes. cooled to body temp again. The consistency of thick oatmeal.
1T baking powder

 2T cinnamon, 
2tsp ground ginger and 
1T vanilla
2 cups Organic Grains Freshly Milled hard white wheat flour
12-14 cups  organic grains bread flour  (I have used fine ground white wheat and been fine doing all whole grain, use only 12-14 cups total if whole wheat is used )

Directions: Dissolve yeast in milk. Stir in honey. Allow yeast to get all foamy and look like it is having a hay day. Add egg, oil, mashed sweet potato, baking powder, 2 cups whole wheat flour, 2 cups all-purpose flour spices, vanilla, and salt, in that order. Do not let yeast come in contact with salt on its own or it will kill the yeast. Beat until smooth. Allow dough to rest 10-15 minutes
Add enough of the flour remaining to make a soft dough that is easy to handle but not dry. Turn dough onto a lightly floured surface and knead 10 full minutes. about 600 turns. Yea. 600 by hand. 5-6 minutes by machine on medium speed. Form into a ball and place in an ungreased 2 gallon bowl, covered tightly. If you don't have a large enough bowl...use two smaller bowls. Or...just half the recipe if you are worried. Put in the fridge. Punch down after 2 hours (this may be faster if you use warm ingredients or flour. If the dough is over 85 degrees when you put it in the fridge, be sure to punch down sooner. Also...if you have kids who open the fridge a lot, be sure to lower the temperature a bit so that your fridge is really as cold as it should be) Form into a ball again. Cover tightly and chill at least 8 hours.
Be sure to punch down daily (this not only expels gas, but also ensures even temperature in the dough). This dough can be made up to 5 days before Thanksgiving! So, it's nice to have around. It's also amazing to make into rolls instead of bread, should you choose to do something else. This makes four loaves. Four. I will only make one here, but you'll get the idea. Take one-quarter of the dough and roll it into a tight ball. I like to expel as much air as possible so it raises rather uniformly. Gather the dough at the bottom and make a tight ball out of the dough.
Place on a parchment lined baking stone or baking sheet, at least 12 inches by 10 inches. Allow to rise until doubled, uncovered, lightly misted with water. When almost raised, turn on the oven to 425 degrees.  Bake 425 degrees 15 minutes and lower the temperature to 350 for the final 15-20 minutes of baking.  Allow cooling. Slice and wrap tightly. 

To make into the Turkey Grilled Cheese simply place a slice of the well-seasoned turkey and 2-3 slices of sharp cheddar on a thick slice of the sweet potato bread. Grill on the stove in a medium skillet over medium heat with melted butter until golden and toasted.  Add a Tablespoon or two of cranberry relish and a drizzle of good balsamic. Garnish with minced fresh rosemary if desired.


Dinner: 
Marinara Turkey Sliders with Roasted Garlic 


Get your rolls.
In this recipe, I used the 4 Ingredient Make-Ahead-Rolls from Organicgrains.com. Or the Make-Ahead No Knead Cracked Wheat Dinner Rolls (pictured below).  If you're still looking for great roll recipes, these will save your brain power. 


You will need:
1 dozen baked rolls 
1 lb cooked turkey
1 cup roasted garlic
1 1/2 cups marinara sauce
12 slices mozzarella
1/2 cup Garlic infused Ahuacatlan Avocado Oil
1 cup parmesan cheese
Parsley, chopped (for garnish if desired)

Direction:
Cut a 1 1/2 inch circle out of the top crust of each roll and set aside. With each roll, remove a little of the soft interior or push it down with your thumb. 


In each roll, add 1 1/2 oz turkey, 2-3 pieces of roasted garlic, 2 Tbsp Marinara, and1 slice of mozzarella. Top with the circle of crust that was removed previously. Brush with garlic infused olive oil and sprinkle with parmesan cheese. Bake at 350° for 15-20 minutes. Serve hot. Garnish with chopped parsley if desired.


There you go! Make some awesome meals with all those Turkey leftovers!

Lemon and herb Roasted Turkey with Cheddar and Citrus Cranberry Sauce Grilled Cheese


Our next grilled cheese of glory for grown-up people who don't just want cheese and bread is this freakishly delicious concoction. It is basically a Thanksgiving feast between two slices of sweet potato bread from the Fall Sweet Potato Bread Tutorial. It really is a bread to keep on hand for the next several months.


Let's start with the relish. I think it is probably one of my all-time favorite recipes for Thanksgiving and we love it!

The citrus cranberry relish is one that I adapted from a Taste of Home recipe found Here. I use orange juice concentrate, balsamic vinegar glaze and zest from orange and lemon to give it added flavor contrasts. I also love the addition of a hint of fennel seed. It gives the sauce a remarkable depth. If you make it for Thanksgiving, it is good in the fridge up to a month! Use it on Turkey sammiches yes, but it is also amazing in oatmeal (really?!), as an addition to muffins and cookies or as a relish for pot roasts and chicken.






Tess' Citrus Balsamic Cranberry Sauce
Ingredients:
  • 1 package (16 oz) fresh or  frozen cranberries
  • 2 cups brown sugar
  • 1/2 cup orange juice concentrate
  • 1/2 cup balsamic vinegar glaze  here
  • 2 cups dried cherries or apricots
  • 1 tsp grated orange zest
  • 1 tsp grated lemon zest
  • 1 tsp fennel seed, optional
Directions:   In a large saucepan, cook the cranberries, sugar, juice and balsamic glaze over medium heat until the berries pop, about 15-20 minutes. Add the remaining ingredients and simmer uncovered for 10 minutes. Cool slightly and transfer to quart jar and cover with a lid.  Good in the fridge up to 1 month.  

Let's talk Turkey. Seriously. This has to be right.

I don't mess with perfection on the turkey and my go-to the last few years has been the tutorial posted by Ina Gartner in 2008. Always perfect. Always flavorful. Would we expect anything less from Ina? She's one of my all-time favorite chefs.  Get her Printable Recipe  and you can also watch the full tutorial here
For the Grown-up grilled cheese...
Place 1-2 slices of warm turkey breast (above) on a slice of sweet potato bread. Top with 2 slices of sharp cheddar cheese. Add 1-2 Tablespoons of the citrus cranberry sauce.  Grill in a skillet  with a few tablespoons of olive oil or butter over medium heat until cheese is melted and bread is golden brown.  Server warm.
There you go darlings! A wicked delicious sandwich for fall! Use both the recipes for the components for your Thanksgiving dinner too!

First Glimpses of the Bistro, the Chefs and the progress!



Those who have been following the recent changes in the Chef Tess adventure were probably just as surprised and excited as we were to hear that we'd be starting a little Bistro here in Mesa, Arizona as part of the amazing venue at Stonebridge Manor . Someone was asking me, "Why is it called  Stonebridge Manor?"...Yes. There is a  stone bridge.  The bridge was added by the visionary owner of the manor, Michael Mills when he purchased the property in 1998. It had previously been a private mansion (details here).  

Michael upgraded the facility dramatically by adding impeccably manicured grounds, an elegant ballroom, a spacious outdoor pavilion and  a state of the art new catering kitchen.   Over 2600 weddings and special events later, his attention to detail, leadership, and the reputation of his staff are undeniable.  This guy is seriously awesome! 
When  Michael Mills asked me if I would be interested in heading up the Bistro part of the food and beverage division of the manor, Palm Street Culinary, my heart almost skipped a beat.  How long have I been talking about running a cafe or bistro?  The reality set in this week as I got to nail down a few details on the menu and take some photos of the location's progress.  "The Bistro" will be located on the East side of the manor.  By the way, we haven't set the name of the cafe/bistro yet so I'm referring to it as the "Bistro" until we get a real name set. Michael Mills has created an unparalleled level of quality in his previous ventures and this will, undoubted be another wonderful success. I'm honored by the trust he is putting in me.  This bistro isn't a wedding venue. It is an on-location foodie destination. It will tantalize and surprise! The best part is, that it will be where you can find me every day of the week.


There is a beautiful Victorian fence surrounding the courtyard dining area and when you arrive, this is what you will see...

 Feel free to walk through the gate and say hello. Smooches. Hugs. Cheering! Pastries handing from my ears if you're lucky...

There will be outside seating to enjoy the Arizona sunshine, as well as a full take-out menu.
I can't wait to share with you what we'll be serving, but it is still a surprise!   The prices will be more than reasonable and it will be open for lunch initially and then we'll be adding breakfast (and hopefully dinner) down the line. The faster the place takes off, the better chance of adding the additional dining times. So, please help spread the word. It means a lot to us.

 My favorite corner to sit in on the patio has trees covering the bistro tables and is an ideal place to just relax for hours.

It appears that the Bistro is indeed an analogy for my life and though things are calm, stunningly awesome and cool on the outside, there is a lot of work on the inside that needs to be done.  Thank goodness there are a lot of people who are willing to help make this dream a reality and I've been blessed to work with two outstanding chef's on this project.  


Chef Mika D.Chevalier is the head chef/food and beverage director for Stonebridge manor and Palm Street Culinary.  I have already learned that he is one of the most high-energy, fun, detail-oriented French guys I know. Actually, I don't know many French guys, but Mika keeps things interesting.  He is very quick to laugh and I imagine that there will never be a dull moment working with this guy. So far, he's lived up to my expectations.  Mika has full run of the place, and I'm thankful for his many years of experience in management and as a chef.   He is known for his meticulous attention to sanitation in the kitchen. Thank goodness! We'll get along! Mika has hired me as his "right hand gal" so we're working pretty closely on the menu and all aspects of the catered events. It's been a blast!


Truth be known,  I feel like I've found my new home. We're already a crazy zany bunch! 3 chefs who love food, are passionate about ingredients and quality, and who are cheering each other on to success. It is refreshing teamwork and I'm thrilled to be part of it!  We anticipate that the grand opening will be the first week of October  or so! Hopefully everything comes together that quickly, but it may be a bit longer.

Amazing Fall Dinner Menu from Lucky Leaf

 About a month ago my friends at Lucky Leaf sent me a sweet package of goodies and some invitations to do a Fall dinner party using their products. I was excited to take part and use what I already knew to be a great fruit filling from a dependable company. I love it when they send me recipes! This time it was for a pork dish called Sweet and Hot Slow Cooker Pork and a dessert called  Cherry Chocotinis. However...the month got away from me and the kids got strep throat. Then Ace got it. Then I got it. Then...I decided I didn't have to wait for a whole bunch of friends and family to come visit in order to serve something special. I think that's the whole point of this post. I think that's what Lucky Leaf was trying to get at anyway, that their filling was good enough to serve to company.   I think that all too often we put things off. We're waiting for that "something special" when in fact, every day we get to wake up and breathe is a special day. I can't say it enough...because this dinner was just that. It was a celebration of the fact that we got to be a family one more day.  It did help however that the pork was tender and amazing slow cooked with the apples and sweet potatoes in a perfect balance of sweet and hot.
 It also helped that it was a freakin' easy recipe that I could make on the run.
 Oh...and the apple filling was amazing.
 Lucky Leaf never fails to have apples in full giant slices packed to the top of the can. Mostly fruit. Now that's how I love it.

 Sweet potatoes kissed with apple and chipotle...yeah, it was amazing.
 My son helped make the dessert and thankfully it was easy enough that even I, a pastry chef, could let my 8 year old make it. He had a blast whipping up the pudding and making the cups. It was a really beautiful presentation...even for a kiddo. Cherry Chocotinis.  Basically this is a very simple dessert. It's a layer of rich homemade or store purchases pound cake , chocolate pudding, Lucky Leaf Premium cherry filling and some glorious gobs of whip cream sprinkled with dark chocolate chips. I used 1 cup of vanilla yogurt in place of one of the cups of milk and a dash of my Chef TessWise Woman of the East Spice and Floral Blend to the pudding as well. It was a hit! We even lined them all up on the outside dessert table for our own little family dinner party.
 Now that's a special occasion.

At any rate, I just had to share the amazing Fall dinner and the sweet family memories that came with it. Thanks Lucky Leaf for the great recipes and wonderful Fall ideas! I appreciate it very much. You know what I appreciate most of all?...I get to live and breathe one more day with the people I hold most dear. Have a wonderful Thanksgiving week my dear friends.

Pizza Chicken Bacon Wraps

Thursday is a good day to have a quick recipe for dinner or lunch. So, it comes as no surprise that I have something in mind. I got a phone call from the producer of the Valley Dish - 12 News. I am excited to be able to be on the show upcoming August 5th at 4:30 pm. It will be a little different than the morning segments I'm used to, and at a different TV station.

I need some help from you, my wonderful friends. I have come up with this recipe that is basically a wrap version of my husbands favorite Sundried tomato blush sauce and pasta, only it's on chicken with bacon. It will be a competition between myself and one other chef to see who's meal is the most "lunch" worthy. So...I was hoping that I could bounce this recipe off of my people here. Tell me what you think. Keep in mind, kids have to like it as well as adults. It has to be made in 6 minutes or less (and meat has to be cooked in that time). Try it out. Let me know how your family likes it. On the plus side...it's also a quick dinner! Call it a pizza wrap and I promise there isn't a kid in America who won't like it. Okay...unless they don't like pizza. Those are the same kids who don't like chocolate or marshmallows...or ice cream.


Pizza chicken and bacon wraps

Ingredients

4 oz light cream cheese, softened

2 clove pressed garlic (1 tsp minced)

1/4 cup Sundried Tomato Pesto from the solar oven
or 1/4 cup sun dried tomatoes, chopped

4 slices bacon, chopped and cooked crisp (turkey bacon okay)

3 spinach-flavored flour tortillas (9-inch diameter) or 3 large hoagie buns, toasted

1 lb chicken breast, chopped fine... seasoned well with Italian Seasoning (to your family's taste) , salt and pepper,
1 1/2 cups shredded romaine lettuce
1/2 cup shredded Parmesan cheese

DIRECTIONS

1. In large skillet, cook chicken breast and pressed garlic for 3-4 minutes on high heat. Add Tomato pesto and the cream cheese until well combined. Cook one or two minutes more until chicken is fully cooked, season well. At the same time you are cooking the chicken, cook the bacon until crispy, about 5 minutes. Gently stir bacon into the chicken mixture.

2. Lay out tortilla. Top each evenly with chicken and lettuce; top with Parmesan cheese. Roll up tightly, folding ends in. Cut in half and serve warm. Alternately, can be served in a hoagie bun as a hot sandwich.
