Homemade Soymilk

If I drink regular milk plain, I wake up in the morning looking all puffy like I stuffed my eyelids with marshmallows. Oh, that's attractive. It doesn't happen with yogurt or any of my homemade cheeses, just on plain milk. If I was more of a rocket scientist, I would have a logical reason for it. As it is, I just steer clear of chuggin' milk from the jug.Unlike my 10 year old. I have to remind him on a regular basis to "get a cup". Really. I feel like the lab assistant at my Dr.'s office...but she's asking for a cup for a totally different reason. There it is. Now you know. I, like Superman, have a weakness. (No...not the cup at the doctor's office. I'm not a total freak. Total.) Milk. My weakness tastes better than kryptonite...and it's really hard to avoid. I try to make my soy milk as much as possible. It tastes just as good as the store kind, except for the fact that it does separate a little and I have to stir it up before I pour it on my cereal. My hats go off to the people at Hodgson Mill. They make this awesome soy flour that I like a lot. Now, I do know you can make the soy milk from the actual soy beans. I just use the flour because it is much faster. Yea, I know. I do have corners to cut sometimes. Bet you thought I just made everything from scratch that took 12 hours at a time right?
You will need:
6 cups water
1 cup soy flour
Combine in a cool pot whisking well and then bring to a boil. Simmer 20 minutes stirring every few minutes so it doesn't burn.
It's that simple. You may strain it if you think yours has lumps. Add a little honey or sugar and a little vanilla or chocolate sauce for flavored soy milk. That's the full rocket science of the project. Remember to keep it in the fridge and stir if needed. Keeps good up to a week.
Enjoy saving money on soy milk.
There you go.

YEAH!! I'm so excited! I have soy flour in my pantry from when I was on that horrific diet, and I had no idea what to do with it. Now I know!! THANKS!! :)
The simple things right?

See, and you can use splenda or stevia and some cocoa in there and you've got low carb and it's okay. I love it with the vanilla. Love it! Yes Kathy...it is the simple things! Simple things will get you through life.

I've got a similar milk reaction, although it happens in about 5 minutes. Puffy eyes, asthma... I'm also fine with normal quantities of cheese (less than a fondue) and yogurt. I thought you might like to know that you're not alone in this. I suspect that the partial digestion of the milk by bacteria fixes whatever part it is that's bad for us.

But I can't stand the taste of soy milk, so I won't be trying this recipe, I'm afraid. I'll stick with rice milk instead.

Ps. From a previous post: "A" is just my first initial, not a randomly chosen letter. I could write "Ann" but I'm usually too lazy.

Oh I love rice milk too Ann! We make a Mexican rice drink around here that is awesome. Yes, it is nice to know I'm not alone in my milk reaction. My husband would say that the "freaks" should band together. I suspect there are more of us than normal people care to admit anyway. Am I right? Welcome my dear. Thanks for the great comment!

Steph, thanks for posting this! I love soymilk, but Curt gets mad at me for taking up fridge space for it. (He's a "cow~milk" man, so sad).

I was so excited to try this yesterday. I went out and bought the flour. It was AWFUL! What did I do wrong (at one point it did boil when I went to get the baby could that be it)? Mine tasted like flour water....not so good. We love soymilk so I was excited to know how to make my own... what a great food storage thing!

Kira, I have found that if I don't cook the soy milk long enough it will be awful. It will taste like flour water. It does need to simmer/boil for the 20 plus minutes and be sure to stir it often so it doesn't burn.

Yeah Stephanie! Now where would I find this soy flour? P.S. I sent a link for your blog to my mother-in-law because I love your blog so much.

I inherited my reaction to milk from my mother, so there's at least 3 of us!

Chef Tess said...

I got my allergy from mom as far as I can tell. Classic! How do we inherit non-cool stuff like that...instead of... hello...bigger bosoms?

A said...

If I'd inherited from my A-cup mother, I wouldn't have a bigger bosom!

I also don't really want more; if anything I'd like a bit less in that area. I do wish I'd inherited some of my mother's thinness, love for healthy foods, and dislike of sweets, however. Too bad we can't pick and choose what we inherit--although in my case, I'd still have allergies, since I got them from both sides.

So funny how it's hit and miss in "that area". I have a sister we endlessly tormented (Raisinette...you know who you are). "Smugglin' lug nuts", we used to say. At any rate, it seems your name fits your cup size...

Still a bummer about the milk allergy though huh?

Mmm, no, A. doesn't really describe my bosom. I'm much closer to the other extreme (teased for being too large).

Anyhow, I think kids will find anything to tease about, so if it wasn't your bosom it would have been something else, like your allergies.

Chef Tess said...

I got teased for the large "boooozzzaaahhms". I had a few friends in the same category and we wanted T-shirt that read "The LBW posse" (LBW=large bosom-ed women). Teased sis' for being so flat the walls where jealous. You're right, kids are bad. Now of course, Em is my best friend. She will be forever.
